Ingredients
2 Cups Ricotta Cheese,
1 8-oz package low fat cream cheese,
3 Tablespoons Honey,
3/4 teaspoon almond extract,
4 C fresh strawberries, hulled and halved,
2 Tablespoons Sugar,
2 teaspoons fresh lemon juice,
Serve with Pizelles, Biscotti, Profiteroles or Amaretti cookie.
Preparation
Blend ricotta cheese, cream cheese, honey and almond extract in food processor until smooth. Transfer to bowl and refrigerate 2 hours. Combine berries, lemon juice and 2 Tablespoons sugar in bowl and toss to coat. Let stand 30 min at room temp. Divide ricotta and strawberries among martini glasses and serve with a biscotti or profiterole. (Can be made 1 day in advance. Keep refrigerated. Stir before Using)
