Ingredients
1 cup of freshly cut pineapple, or if not in season, canned pineapple in light syrup, cut in bite size cubes, then frozen overnight.
1/2 of a small head of Red Cabbage, finely sliced
1 large carrot, grated
1/4 cup of raisins
4 tbsp of mayonnaise
2 tbsp of peach jam
1 tsp of dijon mustard
Preparation
Mix all ingredients together, and store in the refrigerator. Five minutes before serving, add the frozen pineapples bites, mix together and serve.
The pineapple bites help the salad stay cold and fresh and they act like fruity croutons!
