Ingredients

1lbs. 2oz. dried pasta

S&P

knob of butter

small bunch of fresh oregano or marjoram

31/2oz. Parmesan cheese

31/2oz. Fontina cheese

3/12oz. mascarpone cheese

1/4 Nutmeg

A small ball of mozzarella

Preparation

Cook pasta 2 min less, than expected. Froth butter, and add the herbs. Add pasta and reserve cooking water. Add Parmasean, fontina and mascarpone. Return to medium heat and melt cheese. Season and place in baking dish. Grate nutmeg, parmasean and mozzarella atop. Bake for 10 min and finish in broiler.
