Ingredients

1 pound red beans (Camellia brand is best)

1 pound cooked ham (diced andouille sausage works well, too)

1 onion

1 bell pepper

cooked rice

Tony’s, salt, pepper to taste

Preparation

  1. Soak red beans in a slow cooker with just enough water to cover them overnight.
  2. Chop onion, bell pepper and ham (or sausage) and add to beans in a slow cooker; cook on low for 10 hours.
  3. At 8 hours, add spices and mash beans slightly. Serve beans over rice.
