Ingredients

½ lb. ground beef

½ lb. ground pork

one small onion, diced

1 garlic clove, minced

2 tablespoons Bertolli olive oil

1 15-oz jar salsa

1 15-oz can black beans, rinsed and drained

½ lb. rotini, cooked

6 oz. shredded mozarella

4 tablespoons grated Parmesan

Preparation

Heat oven to 375 deg.

In large skillet over medium-high heat, brown beef and pork in olive oil. Add onion and garlic while meat is browning and continue to cook until onion is softened. Add salsa, beans and rotini. Stir until well mixed. Pour mixture into an 8x10 baking dish which has been sprayed with cooking spray. Top with cheeses and bake for about 15 minutes, until cheese is lightly browned.
