Ingredients

4-oz smoked salmon,

1pat butter

2-oz scotch

1 recipe white risotto (made with 1 cup arborio rice, sauteed onion, white wine, salt and pepper to taste)

2 tbsp red fish roe

1tbsp chopped flat leaf italian parsley

Preparation

method:

  • cut smoked salmon into strips

  • melt butter in saucepan, and add sliced smoked salmon

  • saute together until salmon becomes opaque (1 min)

  • add scotch

  • remove from heat when scotch has evaporated

  • set aside

  • prepare standard white risotto

  • do not add any grated parmigiano to the recipe.

  • when risotto has reached al dente stage, stir in “cooked” smoked salmon.

  • add chopped parsely

  • top each serving with red fish roe (1 tsp/serving)
