Ingredients
4-oz smoked salmon,
1pat butter
2-oz scotch
1 recipe white risotto (made with 1 cup arborio rice, sauteed onion, white wine, salt and pepper to taste)
2 tbsp red fish roe
1tbsp chopped flat leaf italian parsley
Preparation
method:
cut smoked salmon into strips
melt butter in saucepan, and add sliced smoked salmon
saute together until salmon becomes opaque (1 min)
add scotch
remove from heat when scotch has evaporated
set aside
prepare standard white risotto
do not add any grated parmigiano to the recipe.
when risotto has reached al dente stage, stir in “cooked” smoked salmon.
add chopped parsely
top each serving with red fish roe (1 tsp/serving)
