Ingredients
5-pound loin of pork
3 tbsp peanut oil
1 yellow onion, chopped
1/2 tsp crushed garlic
1/2 tsp crushed red pepper
6 tbsp soy sauce
4 tbsp sherry
pinch ground ginger
3/4 cup creamy peanut butter
1 cup chicken stock
1 cup heavy cream
Preparation
Roast the loin of pork at 350 degrees until meat thermometer reads 175 degrees
For the sauce, saute the onion and garlic in oil with red pepper. Add soy, sherry, ginger, peanut butter, and stock. Simmer 30 minutes. Strain mixture. Add cream. Serve sliced loin with sauce.
