Ingredients

3 large red peppers

1 onion

2 cloves garlic

1 lb 2 oz tomatoes

1/4 cup olive oil

wine vinegar

salt

pepper

5 tsp sugar

Preparation

Bake peppers, half onion, 1 garlic clove and tomatoes in oven at 350 degrees for 40 minutes. Turn occasionally so that they brown evenly.

Remove, cover with paper and let them sweat.

When cold, peel and cut the peppers into strips. Cut onion into strips. Peel tomatoes and garlic and crush them together.

Add one roasted garlic clove. Add splash of vinegar, salt and pepper and sugar. Bring to a boil then remove.

Serve hot or cold
