Ingredients

1 1/2 T. Olive oil

3 garlic cloves

6 c. low sodium chicken broth

1 T. fresh oregano or 1 t. dried

1/2 c. tubetti or elbow macaroni

3 c. packed thinkly sliced escarole

1 1/2 c. sliced cooked por, smoked pork chops or ham cut into strips

8 T. freshly grated parmesan

Preparation

Heat oil in heavy saucepan over med-low heat. Add garlic, stir until beginning to color, about 2 minutes. Add broth and oregano. Turn heat to high and boil. Add pasta, cook 4 minutes. Add escarole, cook until pasta is tender, about 5 minutes more. Add pork and 3 T. parmesan, cook for 1 minute. Ladle into bowls, sprinkle with remaining s5 T. of parmesan.
