Ingredients

2 tbsp EVOO

3 lb boneless pork loin

1/2 tsp salt and pepper

1 onion chopped

1 tsp chopped garlic

1/3 cup OJ

1/2 cup chicken broth

2 tsp cornstarch

2 tbl lemon juice

Preparation

  1. Heat 1 tbl EVOO in skillet. Add pork and cook for 5 minutes (until brown)
  2. Remove pork and season w/ salt and pepper
  3. add remaining oil, onion, garlic. Cook for 5 min, stirring. Add OJ
  4. Scrape into crock., place roast on top, add chicken broth.
  5. Cook on low for 5 hours.
