Ingredients

1 whole boneless chicken breast w/ skin

4 Tablespoon brie cheese

1/2 shallot diced

2 teaspoon sage

1 clove minced garlic

1/2 lb. red potatoes halved

2 Tablespoons olive oil

salt and pepper

Preparation

  • rinse chicken and remove excess skin and fat
  • mix shallots, sage and brie
  • spread red potatoes in 12" square roasting pan and add minced garlic
  • drizzle olive oil over potatoes, add salt and pepper to taste
  • spread brie mixture evenly under chicken skin
  • layer chicken breast over potatoes
  • cook 425 for 15 mins. - till skin is browned
  • cover with aluminium foil, reduce temperature to 350 and cook for an additional 30 minutes
