Ingredients
1 whole boneless chicken breast w/ skin
4 Tablespoon brie cheese
1/2 shallot diced
2 teaspoon sage
1 clove minced garlic
1/2 lb. red potatoes halved
2 Tablespoons olive oil
salt and pepper
Preparation
- rinse chicken and remove excess skin and fat
- mix shallots, sage and brie
- spread red potatoes in 12" square roasting pan and add minced garlic
- drizzle olive oil over potatoes, add salt and pepper to taste
- spread brie mixture evenly under chicken skin
- layer chicken breast over potatoes
- cook 425 for 15 mins. - till skin is browned
- cover with aluminium foil, reduce temperature to 350 and cook for an additional 30 minutes
