Ingredients
1/4 cup whole grain mustard
1 T. extra virgin olive oil
1 1/2 T. minced chives
4 8-oz. salmon filets
Salt and Pepper
Preparation
Preheat oven to 400° and line rimmed baking sheet with foil. In a small bowl, stir together EVOO, mustard and chives. Season salmon with S&P and place them skin side down on the baking sheet. Spread the mustard mix over the tops of the filets. Roast the fish for 6 min. Prepare the broiler. Broil salmon six inches from the heat for about 4 min, until the mustard crust is browned and the salmon is almost cooked through. Using a spatula carefully slide the filets off their skins and transfer to plates (or leave the skin on, if you desire). Serve immediately.
Suggestion: Serve with Brussels Sprouts sautéed with diced chorizo.
