Ingredients

(1) Large Shallot

1/2 c Kalamata Olives, halved

(1) tbsp Pine Nuts

(2) 6oz Salmon Fillets

(1) tbsp Olive Oil, plus more for Salmon

1/4 tsp Dried Oregano

Fresh Ground Pepper to taste

Preparation

  • Heat 1 tbsp Olive Oil in a small skillet. Add Shallots and cook over medium heat until tender. Stir in olives, pine nuts and oregano. Reduce heat & simmer 2-3 minutes to blend flavors. Set aside
  • Lightly brush Salmon fillets with more oil. place skin-side down on lightly oiled baking sheet.
  • Season with salt & pepper
  • Roast in a preheated 425 degree oven 7-8 minutes.
  • Remove from oven and let sit 5 minutes to finish cooking.
  • Ease Salmon from baking sheet, leaving skin behind.
  • Spoon Olive Spread over Salmon.
