Ingredients
1 head red leaf lettuce
1 red onion, sliced thin
6 fresh beets
6 oz. blue or gorganzola cheese, crumbled
Extra virgin olive oil
Good Balsamic Vinegar
Preparation
Heat oven to 350 degrees, slice tops and bottoms of beets, clean well, place in pan and drizzle with olive oil, cover and roast for 45 minutes, let cool. Caramelize onion with a drizzle of olive oil over low heat until nicely brown. Place cleaned greens on six plates. Distribute evenly onion, crumbled cheese and sliced beets over greens. Drizzle with extra virgin olive oil and balsamic vinegar
