Ingredients

3 beets

1 papaya

2 leeks

Basil leaves from about 6 tips

1 package about 4 ounces goat cheese feta - cut in small cubes

Mixed salad greens

Dressing:

Macadamia nut salad oil

Juice of Meyer lemons or calamandine or combination of both - to taste

Ground sea salt to taste

Preparation

Roast or boil the beets. Peel and slice them. Cut the papaya in half, seed and peel and then cut in small chunks. Slice the leeks thinly and use some green also.

Pluck the basil leaves, wash and pat dry them. Cut the feta in small cubes.

Place salad greens on individual plates or platter. Add the sliced beets, cubed papaya, sliced leeks and the feta cubes and chiffonade of the basil.
