Preparation
Rinse the beets well, place in a roasting pan with some butter, a little water, and salt and pepper. Cover the pan with lid or tightly with foil. Roast at high heat for about an hour until the tip of a knife easily penetrates the flesh.
Cool the beets, then peel and cut into chunks. Toss the beets with your favorite mustard vinaigrette. To plate, place a serving on a white salad plate, toss on some crumbled Skyhill goat cheese, Maldon sea salt and snipped or torn basil or mint.
