Ingredients
1 whole buttercup squash (1 lb), halved, seeded and cut across into 16 slices
3-4 T canola oil
1 1/2 t chili powder
1/2 t kosher salt
Freshly ground pepper to taste
Preparation
Peel squash slices with a sharp paring knife. Place rack in center of oven. Heat oven to 500 degrees. Place slices in a 12 x 8 x 1 1/2" roasting pan. Combine oil, chili powder, salt, and pepper. Toss with squash slices. Roast for 5 min. Shake pan to turn pieces. Roast 5 min more. Shake pan again. Roast 5-10 min more until squash is tender.
