Ingredients
1 small head cauliflower, cut into small florets
1/2 tbsp of olive oil
juice from 1 lemon
1/2 tsp salt and pepper
1/3 cup plain dry breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup golden raisins
2 tbsp chopped parsley
2 1/2 tbsp extra virgin olive oil
Preparation
Heat oven to 425. Toss 1 small head cauliflower in roasting pan with olive oil, then squeeze lemon juice over florets. Season with salt and pepper. Arrange cauliflower in a single layer and roast 20 minutes or until lightly browned and tender. Remove from oven and cool. While cooling, in a bowl combine bread crumbs, parmesan cheese, raisins, parseley and 1.5 tbsps olive oil until evenly moistened. Sprinkle crumb mix over cauliflower and drizzle with 1 tbsp olive oil. Bake 15 minutes at 425 until crumbs are crisp.
