Ingredients
2 heads of cauliflower
1 1/2 Tb olive oil
1 Tb chopped parsley
2 tsp chopped thyme
2 tsp chopped tarragon
3 garlic cloves, minced
1/4 cup Parmesan
2 Tb lemon juice
1/2 tsp salt
1/4 tsp pepper
Preparation
Preheat oven to 450. Place cauliflower in large roasting pan. Drizzle with oil and toss well to coat. Bake for 20 min or until tender and browned, stirring every 5 min. Sprinkle with herbs and garlic. Bake 5 min. Combine mixture with cheese and remaining ingredients and toss well to combine.
