Ingredients
2 dozen cherry tomatoes, cut in half
1 pound fresh mozzarella, cut in cubes
1 bunch basil, minced
olive oil
salt and pepper
balsamic vinegar
Preparation
Oven at 400. Drizzle tomatoes with olive oil, place on parchment lined baking sheet. Sprinkle with salt and pepper. Roast 10 minutes. Cool.
Combine tomatoes with mozzarella and basil. Sprinkle with salt and pepper as needed to taste. Combine 2/3 part olive oil with 1/3 part balsamic vinegar and toss on salad.
