Ingredients

8 small chicken thighs and drumsticks (2.5 lbs)

4 small, crisp apples (Empire or Braeburn), quartered

2 leeks, halved crosswise and lengthwise

6 small sprigs of fresh rosemary

2 Tab olive oil

Salt and Pepper

Preparation

  1. Heat oven to 400*.
  2. On a large rimmed baking sheet (or in a large roasting pan), toss the chicken, apples, leeks, rosemary, oil, 1 teaspoon salt, and .75 teaspoon of pepper.
  3. Turn chicken skin-side up.
  4. Roast until chicken is cooked through and the apples and leeks are tender (40-45 min).
