Ingredients

4 chicken breasts

5 Tbs olive oil

2 tsp salt

1/2 tsp black pepper

6 peaches, quartered & peeled

6 small shallots, halved

2 Tbs balsamic vinegar

8 sprigs of thyme- leaves only

Preparation

  1. Heat oven to 400 farenheit.
  2. Pat chicken dry with paper towels. Rub with 1 Tbs olive oil and season with salt & pepper. Place in baking dish that has been sprayed with Pam Olive Oil spray.
  3. In small bowl, combine peaches, shallots, thyme, and remaining olive oil, salt & pepper.
  4. Scatter the peach mixture around the chicken. Roast until cooked, about 45-50 minutes. Serve chicken with peaches & pan sauce.
