Ingredients
1 kg carrots, peeled and cut on an angle into 1cm slices
2 cloves garlic, finely chopped
2 tbsp Coles pure olive oil
2 tbsp roughly chopped fresh dill
Preparation
- Preheat oven to 190ºC and place baking sheet inside to preheat.
- In a large mixing bowl toss carrots with garlic and oil and season to taste with salt and pepper.
- Place carrots on preheated tray in a single layer and roast in oven for about 12-15 minutes or until carrots are tender and have just begun to brown.
- Remove from oven and let sit for 5 minutes to cool.
- Transfer to large mixing bowl and toss with dill.
- Place the carrots on a large platter and serve warm or at room temperature.
