Ingredients

1 Eggplant

4 cloves minced garlic

2 tbsp olive oil

1 tsp dried basil

1 tsp salt

1/2 tsp pepper

cherry or plum tomatoes

shredded parmesan cheese

Preparation

Preheat oven to 450º. Cut eggplant into 1/2" circles. Toss in bag with garlic, oil, basil, salt, pepper to coat. Place on foil lined baking sheet sprayed with Pam. Bake 35 minutes until browned and finish by sprinkling cheese over top.
