Ingredients

• 1 lb baby red or Yukon gold potatoes

• 1 large onion, thinly sliced

• 1 packet dry Onion Dip mix (I used Lipton’s)

• 1 tsp olive oil

• Salt & pepper to taste

Preparation

  1. Preheat oven to 425 degrees. Line a baking sheet with aluminum foil, and lightly spray with non-fat cooking spray.
  2. Wash and scrub potatoes, and cut into quarters or bit sized pieces.
  3. Place all ingredients in a large Ziplock bag, and shake well to evenly coat the potatoes and onions.
  4. Pour onto baking sheet, and spread out evenly. Sprinkle with a bit of salt and pepper. Place in oven and cook for about 30 minutes, or until potatoes are browned well and soft.
