Ingredients

2 cans garbanzo beans

1 head garlic, peeled and chopped

1 large onion

1 red bell pepper

1 tomato

3 tbsp. olive oil.

1/4 cup chopped fresh cilantro

8 oz. feta cheese

2 tbsp. cumin

juice of 1/2 lemon

salt and pepper, to taste

Preparation

Preheat oven to 400. Put garbanzos, garlic, onion, bell pepper and tomato in baking dish. Drizzle with oil. Roast for 20 minutes. Transfer to bowl and stir in remaining ingredients. Serve warm.
