Ingredients
1 head garlic
4 anchovies
2 tbsp chopped parsley
2 tbsp vinegar (choice)
1 tbsp lemon juice
2 tsp Dijon mustard
1.5 tsp sugar
.5 tsp crushed red pepper flakes
1 C olive oil
Preparation
Cut top 1/3 off garlic clove crosswise, wrap in foil with a drizzle of oil, cut side up. Roast in 450 oven 45 minutes. When cool, squeeze cloves into bowl and mash together with chopped anchovies into a paste. Add parsley, vinegar, lemon juice, mustard, sugar and red pepper and stir. Whisk in oil and season with s&p.
