Ingredients
1 1/2 pint Muir Glen tomatoes
1 oz roasted garlic cloves
1 T fresh rosemary leaves
2 oz red onions, diced
1 1/3 t olive oil
1 1/3 t oregano
3/4 t pepper
3/4 t granulated garlic
1 1/3 t sea salt
2 1/2 T white wine
1 C heavy cream or milk
3 oz parmesan cheese
1 1/3 pints water
Preparation
Toss garlic cloves in olive oil & roast at 350 for 15-20 minutes or until lightly browned.
Saute rosemary, onions, oil, oregano, pepper, granulated garlic & salt until carmelized.
Deglaze the pan with white wine. Add tomatoes & water and simmer.
Blend the mixture and add cream/milk, cheese & roasted garlic. Adjust seasoning.
Serve with crusty bread.
