Ingredients

1/2 lb. small red potatoes, quartered

1/2 lb. sweet potatoes, cut into 1" slices then quartered

1/4 c. dijon mustard

1/4 tsp. minced garlic

2 tbsp. olive oil

1 tsp. Kosher salt

Fresh ground pepper, to liking

Splash of balsamic vinegar

Fresh rosemary, thyme, or other fresh herbs, chopped, to taste

Preparation

Preheat oven to 400 degrees. In a large bowl, blend together dijon,garlic, vinegar. Slowly whisk in olive oil. Add potatoes, salt, & pepper. Toss well to coat potatoes. Microwave on high for 3-5 minutes. After removing from microwave, lightly toss with fresh herbs. Spread potatoes in one layer onto a parchment-lined baking sheet. Bake at 400 until lightly browned and crisp on outside, usually about 35 minutes.
