Ingredients

2 sweet potatoes

3 Tbls olive oil

1 tsp dry mustard

1/2 tsp ground ginger

1/4 tsp cayenne

2 Bartlett pears

Preparation

Heat oven to 450 degrees. Quarter sweet potatoes lengthwise, then slice diagonlly 1 1/2" thick. On a rimmed baking sheet, toss slices with 2 Tbls olive oil and spices. Roast, tossing occaisionally until crisp-tender, 20 - 25 minutes. Core and quarter pear; have crosswise. Add to the potatoes; toss all with another tablespoon of oil. Continue roasting until potatoes are fork tender, about 10 more minutes.
