Ingredients

2 tsp. canola oil

1 small onion, thinly sliced

1 package tri-color peppers, roasted, peeled & seeded, cut into thin strips

Roast jalapeno peppers

Diced cooked chicken

1/4 tsp. salt

2 cups pepper jack cheese, grated

6 flour tortillas

Cilantro

Preparation

  1. Heat oil in skillet over medium heat. Cook onion until browned, about 8 minutes.
  2. Stir in peppers, jalapeno & salt. Heat through; remove from heat.
  3. Place tortillas on griddle. Top with chicken, cheese, pepper-onion mixture and cilantro.
  4. Heat until cheese begins to melt.
