Ingredients
6 plums
6 strips of bacon crisp
8 fresh sage leaves
1/2 red onion
3 cloves garlic
2 tbsp Dijon
1/3 cup red wine vinegar
1 tsp salt
1/4 tsp freshly ground pepper
2/3 cup olive oil
2 tbsp maple syrup
10 oz baby spinach (20 cups)
Preparation
Preheat oven to 450. Cut plums in wedges and toss with olive oil. Line baking sheet with foil and oil. Roast about 12 mins turning once. Roast sage alongside. Toss plums with maple syrup. Thinly slice onion and mince garlic. In bowl wisk vinegar, garlic dijon and salt. Wisk in oil. Toss all ingredients together crumbling sage and drizzle just enough dressing to coat.
