Ingredients

One 3 lb. pork loin

3 T butter, room temp.

2 T dijon mustard

1 tsp. fresh lemon juice

1 tsp. grated lemon zest

1 minced clove of garlic

1 tsp. sage

1 tsp. thyme

1/4 tsp. each of salt and pepper

Sugar

Preparation

Rub the pork loin with olive oil. Mix all of the above ingredients together, except for the sugar. Place the mixture inside the butterflied pork loin. Sprinkle sugar over the outside of the pork. Skewer or tie together the pork loin. Roast at 450 degrees in the oven. Cook till the internal temperature is 155 degrees.
