Ingredients

4 Large Baking Potatoes cut into wedges

4 tbsp Butter

1/4 Cup Olive Oil

1/4 tsp Cumin Powder (for variation try mild curry powder)

1 tsp fine grated garlic

sea salt and fresh ground pepper to taste

Preparation

In a small sauce pan, melt butter. Stir in olive oil and seasoning. Do not over heat. Set aside.

Rinse the potato wedges in cool water and pat dry with paper towel. Place in a large metal bowl. Add the butter and oil mixture to the potatoes and toss until coated. Line a baking sheet with parchment paper and spread out the wedges for baking. Place in oven and bake for approximately 30 minutes, turning once, until tender.
