Ingredients

5 medium to large potatoes - I like Yukon Gold but red potatoes are delicious too

3 large garlic cloves

olive oil

sea salt

crushed red pepper

Preparation

Preheat oven to 350. Peel and dice potatoes to 1/2 inch cubes. Place in 13x9 glass baking dish. Mince garlic and add to potatoes. Add enough olive oil to coat when tossed. Add sea salt to taste - be generous as the salt will help crisp the potato cubes. Sprinkle crushed red pepper over the top to taste and toss again - I use about 1 teaspoon for this quantity. Bake for 1 hour or until potatoes are tender. Enjoy!
