Ingredients
1 rabbit, cleaned and cut into pieces
5 tbsp balsamic vinegar
3 tbsp olive oil
5 juniper berries
2 cloves of garlic
1 bay leaf
1 sprig rosemary
salt and pepper
butter and/or olive oil for cooking
Preparation
Combine all ingredients and marinate for at least 8 hours.
Heat butter and/or oil in heavy-bottomed pan over medium-high. Add rabbit pieces and brown until golden. Turn down the heat to medium-low and add marinating liquid. Cover and cook for approx. 20 minutes or until rabbit is done, uncovering the pan for the last 5 minutes to allow some of the liquid to evaporate.
