Ingredients

1 red pepper

Olive oil

Coarse salt

Aluminum foil

Baking dish

Paper bag

Preparation

  1. Cut red peppers in half, remove stems, seeds and white ribs.
  2. Rub salt and oil all over inside and outside of peppers.
  3. Place peppers on foil-lined baking sheet, cut side down.
  4. Broil 8-10 minutes until black and blistered, but not entirely charred.
  5. Place in paper bag for 15 minutes.
  6. Slice and remove skin.

Note: Can refrigerate for up to 5 days.
