Ingredients
3 # potatoes, skins on, cut in 2" chunks
1/2 c olive oyl
4 garlic cloves, minced
1 tsp salt
1 tsp fresh ground black pepper
1/2 c beef or chicken stock
1/3 c lemon juice
2-3 tbsp fresh chopped rosemary
Preparation
Preheat to 400. Place potatoes in single layer in baking dish. Pour oil over them. Add garlic, salt & pepper. Toss to coat. Bake 15 minutes. Add stock, toss and bake 10 min. Add lemon juice and rosemary, toss and bake 10-15 minutes until potatoes are almost soft. If you like, place under broiler 2-3 minutes to brown. Serve at once.
