Ingredients
6 cups peeled,cubed sweet potatos or yams
1 cup coarsely chopped onion
1 T olive oil
1 clove garlic, minced
Oil a shallow roasting pan. Add first four ingredients, stir well. Roast, uncovered, at 425 F for 25 minutes. Stir once halfway through roasting time.
5 cups broth
1 T each grated orange zest and fresh ginger root
1 whole clove
1/2 tsp each ground cumin and salt
1/4 tsp pepper
Transfer vegetable mixture to a soup pot. Add next 7 ingredients, bring to a boil. Reduce heat to medium-low and simmer for 10 minutes.
6 T low-fat sour cream
fresh cilantro, chopped for garnish
Working in batches, transfer soup to food processor and puree until smooth. Serve with a swirl of sour cream and top with cilantro.
