Ingredients

2 cups instant rice

2 cups Kitchen Basics Vegetable Stock

1/2 cup peas

1/2 cup mushrooms

1/4 cup pine nuts roasted

salt and pepper to taste

Preparation

Add all ingredients into a small pot. Bring to boil, then simmer. Cook for as long as indicated on box of rice. Other options: add chopped onion, peanuts instead of pine nuts, or a tablespoon of soy or tamari sauce.
