Ingredients
2 large eggplants
2 Red bell pepper
2 large zucchini
1 large sweet brown onion
16 oz. purchased hummus
Italian dressing, 8 0z bottle
Pita chips
Preparation
Slice all vegggies to approximately 1/4" Place in gallon zip bag (s) Add dressing, turn to coat.
On game day, roast veggies over medium coals until charred. When cooled, cut into bite-size pieces.
Line serving platter with pita chips. Place hummus dip in the middle and arrange roasted veggies around the dip. ENJOY!!!
