Ingredients

2 lb small red potatoes

6-8 ea. garlic cloves, peeled and finely chopped

2 teaspoon olive oil

1/2cup fresh mine, minced and stems removed

1/2 teaspoon kosher salt or sea salt

Pepper to taste.

Preparation

Scrub potatoes and halve or quarter large size, leave bite size intact. Combine all ingredients in a large bowl or large ziplock bag and stir or shake well to coat all the potatoes Place in a shallow, oiled or oven papered roasting pan. Do not recommend using foil or other pan coatings. Roast for 1 hours. Stir occasionally to avoid sticking. Taste to adjust seasonings when done. Can be served hot or at room temperature, depending on your individual taste.
