Ingredients

16 oz Rock Cod fillet

2 cups grape/sugar plum tomatoes

1 red bellpepper, julienned

3 scallions, thinly sliced

4 Thai (or any hot) chili, thinly sliced

1 c. Thai Basil leaves

2 Tbsp olive oil

3 Tbsp Balsamic vinegar

Salt to taste

Preparation

Preheat oven to 400F Place fillet in a baking dish, place Sprinkle chili over the fillets Cover with Thai basil and then scallions, bell peppers and tomatoes Drizzle olive oil and vinegar Sprinkle with salt Tightly cover baking dish with foil and place in oven for about 15-20 minutes Remove from oven, uncover and place under broiler for about 2-3 minutes, until the top is slightly browned
