Ingredients
Boneless Chicken Breasts 4-6 pieces (pound or cut them lengthwise)
Spice mix (1/8 tsp of each)
Turmeric
Cayenne pepper (use half)
Cumin
Coriander
Ginger
Mint (dried)
1 tsp sea salt
Fresh ground pepper
Onions chopped (big pieces)
Sweet peppers (I used 4 minis - rings sliced)
Capers
Parsley
1 tsp olive oil
1/2 cup white wine
1/2 cup chicken broth
juicec of one lemon
Preparation
Oven to 350 degrees Baking dish set aside Heat frying pan and add olive oil Brown chicken on both sides (sear it) put chicken in baking dish Brown onions and peppers in fry pan, add parsley Add wine, stock and lemon and deglaze pan Reduce a little Pour stock over chicken Bake until done (30-40 mins)
