Rocky Road Brownies
Layer 1:
Brownie Mix
Layer 2:
6 oz. cream cheese- softened
1/4 cup butter- softened
1/2 cup sugar
1 egg
1/2 tsp. vanilla
2 Tbsp. flour
1 cup chocolate chips
Frosting:
1/2 cup margarine
4 tsp. cocoa powder
2 oz. softened cream cheese
3 cups powdered sugar
1 tsp. vanilla
1/4 cup milk
Walnuts *optional
Preparation
Prepare brownie mix according to package directions. Spread in a greased 9x13 pan. Mix second layer ingredients together (except chocolate chips) until smooth. Spread 2nd layer over base and sprinkle 1 cup chocolate chips on top. Bake at 350 for 30-35 minutes. When done sprinkle 2 cups mini marshmallows over hot brownies. Put back in hot oven for 2 minutes or until fluffy. Frosting: Melt margarine and cocoa in a saucepan. Remove from heat- pour into a mixing bowl. Add cream cheese and powdered sugar. Mix well. Add vanilla and milk. Mix until smooth. Pour over hot marshmallows and spread (this will look messy– the marshmallows kind of swirl in with the icing). Chill (in fridge) for at least 2 hours before serving.
