Ingredients

1 4 pound frying chicken (halved or quartered)

4 potatoes (quartered)

1/2 cup olive oil

Juice of 2 lemons

2 shallots

3 cloves of garlic

1 Tablespoon rosemary

Preparation

Place chicken coated in olive oil in baking pan. Next, arrange potato slices around the chicken pieces in the bottom of the pan. In a small bowl, combine oil, thinly sliced shallots, crushed garlic and rosemary and evenly pour the mixture over chicken and potatos. Season with salt and pepper to taste. Bake at 375 for 1 1/2 hours, basting with drippings from the bottom of the pan every 45 minuntes.
