Ingredients

1 kg courgettes (zucchini)

1 big bunch of sage

5 shallots

1/2 glass dry white wine

1/2 glass white wine vinegar

Sunflower oil

Preparation

Cut the courgettes in 1 cm slices, then cut the slices in quarters. Heat the oil in a pan and fry courgettes, onions and sage until golden. Drain the oil, put the pan back on the fire and add wine and vinegar, cook full power for a minute or two, until the juice is reduced.
