Ingredients

10 oz of Simple Syrup

1/2 Cup of Rose Water

10 Cardomon Pods

Pinch of Jamaica tea (optional for color)

1 Bottle Rose Champagne or Pink sparkling wine (decent quality)

Garnish: Mint Sprigs (finely chopped, Chiffonade, or whole)

Preparation

Heat simple syrup and add rose water. Steep tea and Cardomon pods for 15 minutes. Strain into Stainless steel bowl and place in freezer. Every hour or 2 when mixture begins to set, stir with spatula or spoon. Continue until at hourly intervals until time of service. (Granita should resemble shaved ice)

At time of service scoop granita into martini glass or rocks glass and pour champagne over granita until 1/4 covered (alcohol will melt granita!)

Garnish with mint
