Ingredients

2 chopped onions

2 large bags chopped frozen broccoli (or 2 pounds fresh, cooked and chopped)

2 lbs cottage cheese

12 eggs

½ lb grated cheddar or Monterey Jack cheese

6 T. flour

Preparation

Mix everything together and pour into a large greased lasagna pan. This makes more than will fit in a 13 x 9 pan. Bakes best in a shallow pan, such as a lasagna pan, if using a smaller deeper pan, it will take up to twice as long to bake thoroughly.

At this point, it can be refrigerated up to 24 hours, or bake for 60 - 75 minutes at 350 degrees. If refrigerating, let it come to room temp for about 30 minutes before baking. Cannot be frozen, but reheats well as leftovers!
