Ingredients

3 cups sugar (told ya!)

1 cup corn oil (I try not to substitute this – you can taste a difference)

4 eggs

1 15 oz can pumpkin

3 1/2 cups flour

1 teaspoon baking powder

2 teaspoons baking soda

1/2 teaspoon each: salt and ground cloves

1 teaspoon each: cinnamon, nutmeg, and allspice

Preparation

Combine sugar, oil, eggs, and pumpkin in large bowl.

Sift dry ingredients together in separate bowl. Add to pumpkin mixture alternately with 2/3 cup water.

Mix well, but do not over beat. Bake at 350 1-1 1/2 hours. (I use a convection oven and it is done right at 1 hour. Check with knife to make sure it’s done.)
